What can I say about this dish? It is simply delicious! You can store them in the fridge and if you use a good brand of olive oil, they can last for up to 4 days. You can either eat them on toasted bread as a snack or add them to salads, pasta dishes or second courses. If you prefer, instead of aubergines, you can use courgettes or any other veggies of your choice. The method is the same and they are so tasty!
Serves about 4 people
Ingredients
3 medium aubergines cut into thick cut rounds
A bunch of fresh flat leaf parsley, finely chopped
3 or 4 large cloves of garlic, finely minced (depending on how strong you want your aubergines)
Red balsamic vinegar
Olive oil
Salt
Method
On a medium-high heat, grilled the aubergines in a pan on both side until charred.
Arrange them in a porcelain or glass container (they last longer compared to plastic ones), and sprinkle on top the garlic, parsley, salt and a few drops of vinegar.
Create layers until all the slices are covered in olive oil.
Cover with cling film and store in the fridge. Yummy!
