A healthy salad to accompany any second course. I like to add sunflower seeds to all types of salads, but I particularly love this one because it goes so well with the parmesan and pomegranate juice which is super healthy and tasty.
Serve 2 people
1 bag mix leaf salad
1 small red onion, sliced
2 vine tomatoes, chopped
2 small carrots, peeled and chopped
4 baby sweet peppers, cleaned and sliced
80/100g parmesan flakes (depending on how much cheese you like in a salad)
1.5 cup sunflower seeds
Few radishes, thinly sliced
Chiffonade of basil (6 large leaf)
Extra virgin olive oil
4 tablespoon pomegranate juice (fresh or concentrated)
Half squeezed lemon juice
Prepare the salad
In a bowl, add all the ingredients.
In a jar, add the pomegranate and lemon juice, the extra virgin olive oil and salt. Shake well, add to the salad and serve with warm bread.
