Mixed Roasted Veggies with Mozzarella

This plate of veggies is the healthiest choice for a light lunch or dinner and will surely help you lose weight. So, go ahead and eat lots of it!

Serves 2 people


200g fine asparagus (2 packs)

2 good quality mozzarelle

2 medium courgettes, sliced (tick cut)

1 medium size tomato, cut in half

1 large avocado, peeled and cut in half

160g broccoli florets

Extra virgin olive oil

Fresh parsley

Black pepper



In 2 separated pots, boil the broccoli and the asparagus until al dente, drain them and let them cool.

Fry the courgettes for few minutes in a pan with a little extra virgin olive oil and season with parsley, salt, and pepper. Alternatively, you can cook them in the oven until charred.

Arrange all ingredients in 2 plates and serve with 1 or 2 slices of toasted bread and mozzarella on the side.
