Tortiglioni with Tomato Sauce, Garlic and Basil

Yep, tortiglioni again. I cannot help it. I just love this type of pasta and they are perfect for this simple sauce with garlic with basil. Totally my favourite!

Serves about 3/4 people


500g tortiglioni

2 cans chopped tomatoes

2 large cloves of garlic, finely chopped

15g fresh basil (roughly chopped) or 1 teaspoon of dried basil

Freshly grated parmesan cheese

Extra virgin olive oil



Fill a large pot with water and bring to a boil on medium heat.

Add some salt, the tortiglioni, and cook until “al dente”.

While the pasta is cooking, take a saucepan and with a little extra virgin olive oil, fry the garlic for a few seconds.

Add the chopped tomatoes, basil, half glass of water and season.

When the water is reduced, the sauce is ready.

Serve with parmesan.
