In Italy, we make something similar but with rice. You literally put in whatever you have available at home and you store it in the fridge so when you want to eat, food is ready! Perfect for picnics, birthdays and for when you don’t have much time to cook, this dish will surely give you some energy.
Serves 8 people
Ingredients
400g turkey breast mini fillets, grilled and cut into small chunks
8 medium size white potatoes, boiled and cut into small chunks
Half glass pimento-stuffed green olives, each cut in half
Half glass pitted black olives, each cut in half
7 medium size cocktail cornichons in vinegar, sliced
3 large red tomatoes, cut into small pieces
2 large avocados, cut into small pieces
Half pack of 250g Emmental cheese, cut into small pieces
6 small hard-boiled free-range eggs, cut into small pieces
440g smoked bacon, oven cooked and chopped
4 medium spring onions, finely chopped
A bunch of fresh flat leaf parsley, finely chopped
1 tbsp dried or fresh dill
1 tbsp dried or fresh chives
1 tbsp dried or fresh basil
Extra virgin olive oil
The juice of 2 lemons
Few drops of Tabasco (optional)
Salt
Black pepper
To marinate the meat
The juice of 1 lemon
1 tsp mixed dried herbs
1 tsp dried or fresh parsley
1 tsp dried or fresh rosemary
Extra virgin olive oil
Salt
Pepper
Method
For the potatoes
Put the potatoes in a large pot and fill it with water.
Bring the water to boil over medium heat and cook until the potatoes are easily pierced with a knife.
When done, let them cool down, peel them and cut them.
For the bacon
Remove the fat and place the slices on top of an oven grill tray.
Cook the bacon at 180° for about 10/12 minutes (the exact baking time depends on how thick your bacon is and how crispy you like it).
When done, let it cool down and then chop it.
For the grilled turkey
Using a sharp knife, cut through the centre of the breast by being careful of keeping the two pieces together.
Place the turkey in a small container with a lid and let it marinate for a while with all the ingredients listed in the “to marinate the meat” section.
When it is time to cook the meat, heat a non-stick pan over medium-high heat, add some extra virgin olive oil and cook each side for about 3 minutes or until golden brown.
When done, let it cool down and then cut it.
Time to mix all the ingredients
Take a large bowl and mix the potatoes, the bacon and the turkey with all the other ingredients.
Adjust the salt and pepper to your liking if needed and garnish with a few fresh basil leaves and a few drops of Tabasco.
