Swedish Meatballs with 2 Colours Courgettes

This super tasty Swedish meatballs and courgette soup will delight your child’s palate and you will probably end up preparing it at least once per week for yourself too. It’s delicious!

1 portion


1 yellow courgette

1 green courgette

1 ripened tomato, peeled and chopped

1 small red onion

2 Swedish meatballs

1 tsp extra virgin olive oil

1 tsp of freshly grated parmesan cheese

1/2 tsp of fresh parsley, finely chopped

1 tsp vegetable bouillon


In a small saucepan, put all the ingredients (washed and chopped) to boil on a medium heat.

In the metime, take a couple of meatballs from the freezer and cook them for a few minutes either in the oven or in a small pan.

When golden brown, cut them in half and put them aside.

After 20 minutes or so, the soup is ready to be pureed with a hand blender.

Add the meatballs, the parmesan, the parsley, and serve.
