Tuna Salad with Artichokes

A healthy salad perfect for lunch breaks. Artichokes and tuna are a great combo so I’m sure you will enjoy this salad.

Serves 2 people

Ingredients

Few artichokes hearts (try the type in olive oil seasoned with garlic and herbs)

200g mixed leaf salad

6 × 80g or 3 × 160g good quality tuna

15g chiffonade of basil

Red balsamic vinegar of Modena

Extra virgin olive oil

Salt

Prepare the salad

Arrange all ingredients in 2 plates, season and enjoy with fresh or toasted bread.
