Courgettes and Carrots Salad

I simply love this dish. Fried carrots taste amazing and they go very well with courgettes. You can eat them on its own or as a side dish with meat or fish (I love them with cod or sea bream).

Serves 2/3 people


3 large carrots, sliced (thick cut)

2 large courgettes, sliced (thick cut)

Extra virgin olive oil

Fresh parsley, finely chopped

Black pepper



For the courgettes

On a medium-high heat, grill the courgettes in a pan (or a grilled type), one side at a time, until slightly soft and charred. Alternatively, you can cook them in the oven until they become charred.

Arrange them on a plate and add the parsley, extra virgin olive oil, salt and pepper.

For the carrots

In a pan with a little extra virgin olive oil fry the carrots until slightly blackened.

Add salt, pepper and parsley.

Add the carrots to the aubergines and serve.
